
Bruschetta is a must-have dish for the summer! Ours, with tomatoes, robiola cheese, and delicious Colavita pesto, take the simple flavors of this traditional recipe to the next level.
Ingredients for 4 bruschette
4 slices of rustic bread
1 clove of garlic
2 oxheart tomatoes
200 g of assorted cherry tomatoes
4 tablespoons of Colavita Pesto
200 g of robiola or other spreadable cheese
1 tablespoon of Colavita Extra Virgin Olive Oil
A handful of fresh basil
Salt
Pepper
Wash and slice the tomatoes, then season with salt and pepper. Wash the basil and roughly chop it.
Toast the bread and rub it with a clove of garlic.
Spread the robiola on the bruschette, add a teaspoon of pesto and the tomatoes.
Drizzle with extra virgin olive oil and garnish with additional pesto and fresh basil.
