Ingredients for about 6 people

6 large artichokes

400 g stale bread

1 egg

4 tablespoons Parmesan cheese

1 medium scamorza cheese

1 cured sausage

Colavita Extra Virgin Olive Oil

Pepper

1 clove of garlic

Pennyroyal (or mint)
Clean the artichokes and cut the stems into small pieces. In a bowl, combine the stems, stale bread, egg, Parmesan, diced scamorza, and diced sausage. Add a drizzle of olive oil, salt, and pepper.
Flatten the heart of each artichoke on a surface to open up the leaves and stuff with the prepared mixture.
Place the artichokes upright in a pan so they remain standing. Add olive oil, garlic, pennyroyal, and enough water to cover all but about one finger of the artichokes.
Drizzle a little extra oil over the exposed part, cover, and cook over medium heat for about 30 minutes.
