Linguine with Artichokes, Peas, and Sausage

Linguine carciofi, piselli e salsiccia

A tasty alternative to the usual sauce: linguine with artichokes, peas, and sausage. Perfect for those who love bold flavors!

Ingredients for 2 people

  • 2–3 artichokes

  • 1 small lemon

  • 2 tablespoons Colavita Extra Virgin Olive Oil

  • 1 small onion

  • 1–2 sausages

  • 100 g peas

  • 200 g linguine

  • 80 g grated Grana cheese

Clean the artichokes, removing all outer leaves and fibrous parts. Soak them in water with the halved lemon to prevent browning.


Peel and thinly slice the onion. Drain and finely chop the artichokes.


Remove the casing from the sausages. Sauté the onion in 2 tablespoons of oil, then add the artichokes and sausages.


Cook over medium heat for 3–4 minutes, add the peas and 100 ml of warm water. Sauté until the peas are tender and the other vegetables softened.


Meanwhile, cook the linguine in salted water, drain, and add to the pan. Toss everything together, adding a little pasta water and some grated Grana.


Serve immediately with the remaining Grana and a few twists of freshly ground pepper.
