Craving a completely vegan dessert made with just a few simple ingredients in no time? Try these delicious vegan chocolate chip cookies—they’ll give you a breakfast or snack you won’t be able to resist. 🍪

Ingredients for about 20 cookies

  • 150 ml Colavita Extra Virgin Olive Oil

  • 120 g muscovado sugar

  • 120 g white sugar

  • 50 g water

  • 1 teaspoon salt

  • 400 g all-purpose flour

  • ½ tablespoon baking powder

  • ½ tablespoon vanilla powder

  • 200 g dark chocolate chips

  • Flaky salt

In a stand mixer (or using an electric whisk), mix the oil, sugars, salt, and water for 3–4 minutes. Add the sifted flour with the baking powder, vanilla, and chocolate chips. If the dough is too runny, add one or two tablespoons of flour; it should be firm and homogeneous.

Cover with a cloth and let rest in the fridge for 30 minutes.

Preheat the oven to 160°C (fan-assisted).

Line a baking tray with parchment paper, scoop portions of dough, and slightly flatten them to shape the cookies. Place them on the tray, leaving space between each cookie (they will spread while baking).

Sprinkle with flaky salt and bake for 10–12 minutes.
