Mixed salad leaves

150 g Colavita Country-style Artichokes

¼ red onion

1 small bunch of asparagus

60 g Colavita pitted olives

Colavita Extra Virgin Olive Oil

Colavita Balsamic Vinegar of Modena IGP
Wash and dry the salad leaves. Chop and distribute them onto two plates.
Clean and thinly slice the onion, soaking it in water for 10 minutes.
Remove the tough ends from the asparagus and boil for 3–4 minutes. Chop into pieces and add to the salad along with the sliced Carciofi alla Paesana.
Add the pitted olives and the soaked onion.
Season with salt and pepper, drizzle with extra virgin olive oil and a splash of Balsamic Vinegar of Modena IGP, and serve.
