Summer is ending, but the craving for ice cream never fades. Try it in a delicious sandwich made with Colavita extra virgin olive oil cookies.
Ingredients for about 16 sandwiches

120 g flour

50 g rolled oats

½ teaspoon salt

½ teaspoon baking soda

100 g Colavita Extra Virgin Olive Oil

135 g brown sugar

1 egg

1 teaspoon vanilla extract

100 g dark chocolate, chopped
Preheat the oven to 180°C (356°F) and line 2 baking trays with parchment paper.
In a bowl, mix together the flour, baking soda, salt, and rolled oats.
In another bowl, combine the olive oil, brown sugar, egg, and vanilla extract, mixing until smooth. Gradually incorporate the dry ingredients, stirring until well blended.
Add the chopped dark chocolate and form dough balls about 4 cm in diameter. Wet your hands slightly with cold water if needed.
Place the dough balls on the prepared trays, about 7 cm apart. Using a wet palm, gently press each ball to slightly flatten it. Bake for 13–15 minutes and let cool.
Once the cookies have completely cooled, place a scoop of your favorite ice cream on the bottom of a cookie and top with another cookie, pressing gently to form a sandwich.
Quickly assemble the remaining sandwiches and place them on a tray. Store in the freezer until ready to serve.
