Tagliatelle with turmeric and courgette is a delicious recipe which is easy to prepare.
Also known as ‘Indian saffron’ or ‘yellow ginger’, turmeric adds zingy colour and flavour to any dish.
Ingredients for 2 people:
4-6 Colavita Tagliatelle nests
4 small courgettes
1 clove of garlic
½ dry chilli pepper (optional)
4 spoons of extra virgin olive oil
1 spoon of powdered turmeric
Bring water to the boil in a large pan, adding salt.
Wash the courgettes and cut them julienne style.
Heat 4 spoons of extra virgin olive oil in a large pan and lightly brown the squashed garlic clove and the chilli.
Add the courgettes to the pan together with a pinch of salt and fry for a few minutes.
Cook the tagliatelle, drain and add to the pan.
Mix well, adding a spoon of turmeric together with some of the water used for cooking the pasta. Add salt and pepper and serve
