Ingredients for 14 large cookies
120 g white sugar
Zest of 1 large lemon
125 ml + 1 tablespoon Colavita extra virgin olive oil
85 g powdered sugar
2 tablespoons whole milk
1 large egg at room temperature
2 teaspoons almond extract
300 g all-purpose flour
½ teaspoon fine salt
¼ teaspoon baking soda
Gel food coloring
In a bowl, combine the grated lemon zest and white sugar, working the mixture with your fingers. Add the extra virgin olive oil, egg, powdered sugar, milk, and almond extract, mixing well to combine everything.
Add the sifted flour, fine salt, and baking soda, continuing to mix.
Take a small portion of the dough, enough to form about 4 balls of 5 cm in diameter. Wrap the remaining dough in plastic wrap and refrigerate.
Color the small dough balls with gel food coloring of your choice. Wrap each colored dough ball in plastic wrap and refrigerate for at least 2 hours.
Work with one colored dough ball at a time, keeping the others in the fridge. Flour the work surface and roll out the dough to a thickness of about 3–6 mm. Use small cookie cutters to cut shapes of your choice (Christmas trees, candy canes, snowflakes, mittens, stockings, gingerbread men, flowers, etc.).
Transfer all the mini cutouts to a baking sheet lined with parchment paper and place in the freezer for 15 minutes. This makes them easier to handle.
Generously flour the work surface and roll out the main dough to a thickness of about 3–6 mm.
Remove the previously frozen cutouts from the freezer and arrange them randomly on the rolled-out dough. Once you’re happy with the layout, cut the cookies using a fluted cookie cutter.
Using a thin spatula, transfer the cookies to a baking sheet lined with parchment paper, spacing them at least half a centimeter apart. Place the entire tray of cookies in the freezer for at least 30 minutes before baking.
Bake in a preheated oven at 180°C (356°F) for 11–12 minutes, or until the edges start to brown. Remove from the oven and leave the cookies on the baking sheet for 1 minute before transferring them to a wire rack to cool completely. Serve and enjoy!
