Bowl with rice, avocado, chicken, and red onion, dressed with fresh tomato, basil, and olive sauce, and the must-have Colavita Basilolio! This delicious combination of flavors offers a unique culinary experience that will delight your palate.

Ingredients for 2 servings

  • 200 g Colavita Arborio Rice

  • 1 avocado

  • 200 g chicken breast

  • 150 g fresh tomatoes

  • ½ small red onion (Tropea)

  • 100 g Colavita pitted olives

  • 2 lemons

  • A handful of basil, parsley, and oregano

  • 2 tbsp Colavita Extra Virgin Olive Oil

  • 2 tbsp Colavita Basilolio

  • Salt

  • Pepper

Cook the rice in lightly salted water according to package instructions. Drain and rinse under cold water.


Slice the chicken breast thinly and season with salt, pepper, and 1 tablespoon of olive oil. Heat a grill pan and cook the chicken until done.


Wash and chop the tomatoes. Rinse and chop the olives. Finely chop half of the red onion. Combine tomatoes, onion, and olives in a bowl, adding salt, pepper, and 1 tablespoon of olive oil.


Slice the avocado and sprinkle with lemon juice to prevent browning.


Arrange the rice, chicken, avocado, and fresh tomato sauce around the bowl. Drizzle with Basilolio and a splash of lemon juice before serving.
