1.5 kg mixed seafood (mussels, clams, white fish, shrimp)

100 ml white wine

Soak clams in cold water for 2 hours, changing the water 2-3 times. Clean the mussels under running water, scrape the shells, and remove the beard.
Clean the shrimp, remove the black vein, and set aside the shells and heads.
Prepare the fish stock: roughly chop half an onion and the celery. Sauté briefly in a pot with a tablespoon of olive oil, then add shrimp heads and shells.
Sauté for 2-3 minutes, deglaze with 100 ml white wine, add 1 liter of water and a bay leaf. Bring to a boil, reduce heat, and simmer for 40 minutes. Season with salt at the end. Strain the stock through a fine sieve.
Chop one onion, crush the garlic, and sauté with a chili over medium heat. When softened, add the tomato passata and stir. Gradually add the fish stock, one ladle at a time, stirring well. Simmer on low for 5 minutes.
Meanwhile, cook the shrimp in a separate pan with a tablespoon of olive oil.
Heat a tablespoon of olive oil in another pot, add the mussels, and after 2 minutes add the clams. Cover and cook for about 5 minutes. Remove half of the shellfish from their shells and reserve the cooking liquid.
Cook the white fish pieces in the prepared stock for about 5 minutes.
Add the shrimp, mussels, and clams to the soup, cooking 1-2 more minutes. Remove from heat and keep warm.
Prepare the couscous: place 1 cup in a bowl, add a drizzle of olive oil and 1 cup boiling water. Cover and let it swell for 5 minutes. Fluff with a fork and add to the soup.
Season with Pepperolio to taste and serve immediately.
