Banana, Almond and Chocolate Muffins

Sweet lovers, you can’t miss this recipe! It’s perfect for a dinner with friends when you want a dessert that will make everyone happy. For these muffins, we used our Mediterranean Extra Virgin Olive Oil as a base, with its fresh and delicate flavor—perfect for any use.

Ingredients for 6-8 muffins:

  • 2 very ripe bananas, almost black

  • 200 g almond flour

  • 60 g fine brown sugar

  • 2 eggs

  • A pinch of salt

  • 1 tablespoon baking powder

  • 75 ml Colavita Extra Virgin Olive Oil

  • 80 g dark chocolate chips

  • Powdered sugar, for serving

In a large bowl, mix the almond flour, salt, sugar, and baking powder.


In another bowl, lightly beat the eggs.


Add the eggs to the flour mixture, then fold in the peeled and mashed bananas and slowly pour in the olive oil, mixing thoroughly (you can use electric beaters) until the batter is smooth and well combined. Stir in the chocolate chips.


Preheat the oven to 180°C (356°F), fan-assisted.


Line muffin tins with paper liners and evenly divide the batter, leaving about 1 cm from the top.


Bake for about 30 minutes, checking doneness with a toothpick.


Serve with a dusting of powdered sugar.
