Ingredients for 2-4 people

1 cup Colavita Couscous

1 cup boiling water

4 tbsp Colavita Extra Virgin Olive Oil

1 medium cauliflower

1 red onion
-
1 jar of Colavita Tender Artichokes in Extra Virgin Olive Oil

Pepper

Original Glaze with Balsamic Vinegar of Modena

Fresh mint leaves for garnish
Preheat the oven to 180°C (356°F).
Wash the cauliflower and remove the stem. Cut it into medium-sized pieces and place them on a baking tray.
Peel the onion, cut it into six wedges, and mix well with the cauliflower, a pinch of salt, pepper, and 2 tablespoons of olive oil. Spread the vegetables evenly on the tray and roast for about 20 minutes.
Place one cup of couscous in a bowl, add a drizzle of olive oil, and pour in one cup of boiling water. Stir, cover, and let it steam for 5 minutes.
Drain the artichokes from excess oil and add them to the couscous along with the roasted vegetables.
Drizzle with a little extra virgin olive oil and season with salt and pepper to taste. Finish with a few drops of Classic Glaze and fresh mint leaves.
