1 sea bream (500–600 g)

3 large potatoes

2 sprigs of rosemary

2–3 sprigs of parsley

1 small red onion

10 Colavita Pitted Olives

2 tbsp Colavita Capers

2 tbsp Colavita Chili Peppers in Extra Virgin Olive Oil

1 clove garlic

3 tbsp Colavita Extra Virgin Olive Oil

1 tsp Colavita Red Wine Vinegar

Clean the fish by removing scales and innards, rinse well, and pat dry with paper towels.
Wash the potatoes (peeling is optional) and slice them thinly.
Arrange the potato slices on a baking tray lined with parchment paper and add the rosemary sprigs.
Place the fish on top of the potatoes and season the inside with salt, pepper, a slice of onion, and parsley. Season both the fish and potatoes with salt and pepper, drizzle with olive oil, and bake at 180°C (356°F) for about 20–30 minutes.
Check for doneness by looking at the fish’s flesh: if the sea bream is white and firm, it’s perfectly cooked. The potatoes should be nicely golden.
Meanwhile, chop the olives, rinsed capers, and parsley. Mix with half of the onion finely diced, salt, pepper, a drizzle of olive oil, and a teaspoon of red wine vinegar. Serve alongside the fish.
