Parmesan Tartines with Mortadella Mousse and Original Glaze with Balsamic Vinegar of Modena

For your New Year’s Eve dinner, we suggest our Parmesan Tartines with Mortadella Mousse and Original Glaze with Balsamic Vinegar of Modena—the perfect way to bid farewell to the past year in style, especially when paired with a lucky toast!

Ingredients for 2 people
For the Parmesan Tartines:

  • 50 g Parmigiano Reggiano

  • 200 g all-purpose flour

For the filling:

  • 300 g mortadella slices

  • 50 ml hot water

  • Original Glaze with Balsamic Vinegar of Modena Colavita

Rub the flour, Parmesan, salt, and cold cubed butter with your fingertips or in a food processor until you get a sandy texture.

Add the beaten egg and mix well to form a dough. Wrap it in parchment paper and let it rest in the fridge for at least one hour.

Preheat the oven to 180°C. Roll out the dough and cut into discs.

Grease a tartlet pan and place the discs inside. Bake for 10–12 minutes or until golden.

Meanwhile, cut the mortadella into pieces and blend it with the hot water.

Transfer the mixture into a piping bag, fill the tartines, and serve with a drizzle of balsamic glaze.
