
Our Salmon Burger with Chimichurri Sauce are as pleasing to the eyes as they are to the palate—a light dish without sacrificing flavor.
Chimichurri Sauce Ingredients:

1 cup parsley

2 tablespoons chopped cilantro

4 garlic cloves

¼ cup Colavita Extra Virgin Olive Oil

1 tablespoon lime juice

⅔ cup Greek yogurt

2 tablespoons Colavita white wine vinegar

1 large avocado

¼ teaspoon salt

Chili flakes, to taste
Combine all ingredients in a blender or food processor until smooth. Taste and adjust seasoning as desired. Store covered in the fridge for up to a week.
Salmon Burger Ingredients:

300 g cooked salmon (canned works fine)

1 egg

¼ cup Greek yogurt

⅔ cup breadcrumbs

1 tablespoon Worcestershire sauce

1 tablespoon mustard

Hot sauce (optional)

¼ cup chopped fresh parsley

1 tablespoon lemon juice + 1 tablespoon lemon zest

Salt and pepper

In a large bowl, mix the Greek yogurt, breadcrumbs, Worcestershire sauce, mustard, optional hot sauce, parsley, lemon juice, and lemon zest.
Add the salmon, egg, salt, and pepper, and mix thoroughly. Cover and refrigerate for at least 1 hour.
Once chilled, form 4 patties by hand.
Heat 4 tablespoons of olive oil in a large skillet. Fry the patties for 3–4 minutes per side until golden. Transfer to a plate lined with paper towels.
Assemble the burgers: place some lettuce on hamburger buns, top with the salmon patty and chimichurri sauce, add sliced red onions if desired, and cover with the top bun.
