Red Bean Salad with Grilled Octopus, Red Onion and Herbs

The perfect lunch break or quick dinner recipe: a protein-rich salad with beans, fish (or meat if you prefer) and seasonal vegetables. Tasty and filling!

Try out the mix of grilled octopus, red onion, herbs and Colavita red beans. A colourful, summery dish with intense flavours – perfect with a glass of white wine.

Ingredients for 4 people:

400g of Colavita Cannellini beans
400g of Colavita red kidney beans
400g of octopus
2 celery sticks with leaves
1 bunch of parsley
4 spoons of Colavita Extra Virgin olive oil
Salt
Pepper

Boil the octopus in salted water for 40 minutes.
Wash the beans, drain well and place in a large bowl.
Wash and finely chop the celery. Chop the leaves together with the parsley and add to the bowl with the beans.
Once the octopus is cooked, leave to cool and cut into pieces.
Mix together with the other ingredients, add salt and pepper to taste and drizzle generously with Extra Virgin olive oil.
