
Our recipe for Cod with Olives and Capers is a burst of flavor and aroma—thanks in part to Colavita 100% Portuguese Extra Virgin Olive Oil, whose delicate scent makes it irresistible!
Ingredients for 4 servings:

500–600 g cod (desalted and soaked)

4 tablespoons Colavita Extra Virgin Olive Oil

1 white onion

2 tablespoons Colavita capers in vinegar

16 Colavita pitted olives

50 ml white wine

400 g Colavita tomato pulp

400 g Colavita cherry tomatoes

A handful of parsley or oregano

Salt

Pepper
Purchase ready-to-use cod and soak it for the time recommended by your fishmonger. Remove the skin and bones, then cut into 4 or more pieces.
Drain and slice the olives.
Rinse the capers, drain, and chop them.
Wash, dry, and chop the parsley.
Peel and thinly slice the onion. Sauté it in 3 tablespoons of olive oil over medium heat for 5 minutes, then add half of the capers and olives.
Increase the heat, add the cod pieces, and brown them for 4–5 minutes. Deglaze with white wine, add the tomatoes, and stir for a few minutes.
Reduce the heat and cook for another 15 minutes, adding a little water if needed.
Adjust salt and pepper, then serve with the remaining capers, olives, and chopped fresh herbs.
