Pappa al Pomodoro (Traditional Tuscan Tomato and Bread Soup)

Pappa al pomodoro

Pappa al Pomodoro is a traditional Tuscan dish rooted in peasant cuisine, celebrating the authentic flavors of our land. That’s why we love it so much! It requires just a few carefully selected ingredients: homemade bread, ripe tomatoes, fresh basil, and high-quality Extra Virgin Olive Oil.

Ingredients for 2 servings:

  • 500 g ripe tomatoes

  • 200 g stale Tuscan bread (unsalted, crust removed)

  • 1 small onion

  • 1 celery stalk

  • 1 clove garlic

  • A handful of fresh basil

  • 100 ml Colavita Extra Virgin Olive Oil

 

Wash the tomatoes and make a small cut at the base of each.


Blanch them in boiling water for about 1 minute, then drain, saving the water separately.


Break the bread into pieces, remove the crust, and soak it in the reserved tomato water for at least 10 minutes.


Peel the tomatoes and pass them through a food mill.


Clean and finely chop the onion and celery. Finely chop the garlic and roughly chop the basil.


In a deep pan, heat 2 tablespoons of olive oil over low heat and sauté the onion and celery for about 5 minutes. Add the tomatoes and cook slowly for another 20 minutes.


Meanwhile, squeeze the bread to remove excess liquid and crumble it by hand.


Add the crumbled bread and chopped garlic to the tomatoes and cook for another 5 minutes.


At the end, stir in the basil and generously drizzle with extra virgin olive oil before serving.
